I would recommend you to find special restaurants that focus on local cuisines of cities in Turkey. For example, Antakya/Hatay cuisine, Gaziantep/Sanliurfa cuisine, Adana/Mersin cuisine, etc.
There are restaurants that only focus on these cuisines as well as other cities' cuisines in Turkey.
You can find these places on Yelp in English, and neredeneyenir.net and mekanist.com in Turkish.
If you could give some specific details, I can suggest you specific restaurant names and addresses in Istanbul where you can taste local foods from special cuisines.

I met my husband in Turkey. Istanbul is the city there and it is a wonderful place to go. It is a little run down compared to the city's in America but again still beautiful. Not all places have Wi-Fi but Istanbul is still in the 21st century a little bit. I hope you really enjoy you trip. And PS try to get in to the Temples there!!!!!!! over 6 years ago
