Mary, just about everywhere. The great thing about Thai food is that it uses fresh ingredients cooked quickly over very high heat.... that kills most nasties. Here are a few tips: don't consume anything that's been sitting on display, ask for a fresh dish to be prepared for you. Watch them cook it, make sure the fingers don't go into the pot, make sure the cook doesn't have a sore on their hand. generally pick the busiest stalls, especially if the locals are choosing it. A stall holder who serves bad food will quickly lose custom from those in the know.
The bowl of chilli flakes on the table.... don't, just as you wouldn't dip into the bowl of nuts on a western bar (other people's hygiene habits are a problem!). Take some anti-bacterial hand gel with you, and use it before and after every meal. You might also want to use it on the shared utensils offered at street stalls before eating.
If you're unused to spicy food, go easy on the chilli for a few days until you acclimatise.
Personally, I try not to get too hung up about it, just take a few sensible precautions. I find being obsessed by hygiene will ruin the trip. Sure I've been sick, but only a couple of times out of all my trips.
Final note: don't confuse Traveller's Diarrhoea with food poisoning/gastro. Just about everyone gets TD, because the microbes that are in everything you eat and drink at home are different to the ones you encounter while away - it takes the tummy a day or two to get used to the new ones. Diarrhoea for a day or two is pretty normal. If it lasts a week or ore, go see a doctor.

Phil's answer is fine. Follow his cautions but watch for trouble.
Bodies are different; I am more sensitive about food. I lived in Thailand for about five years then went back to the west for three years. When I returned to Thailand I found could not eat the food without TD for almost a year. Following that I could eat everything (even in the Philippines). Be careful but eat.
Watch for serious diarrhea and seek treatment if you get it. On my return to Thailand I had food poisoning. I had to go to the toilet 50 (not 15) times in a day. Saw this as SERIOUS so went to hospital. After blood test and stool sample test I met with a doctor. Waited for lab results then I met with doctor again got diagnosis and treatment. Paid bill (11$), took medication and then I recovered.

Mary the street food just about anywhere in Thailand is fine. Thai people do not generally cook anything at home. Thais live off street food so if the Thais are buying from a particular street vendor they are locals and know the food is safe. I have had more tummy problems in Thailand from expensive restaurants than from cheap street food. Sukhumvit Soi 38, Thonglor BTS Station. Enter the soi 38 and you will see a crowd of street vendors to fulfill any paladar, any taste. Really delicious! The Phathai Goong on the right almost in the corner is recognized even in newspapers. After 6h pm is the best option till 01h am. Cheers! over 7 years ago
As a local- all street food are fine as long as you know they've been selling for a while. If they are new, you might not want to be the first! Just see if there are other locals eating. Another way to see how good the food is- just check the number of tables/chairs as well as the pile of dishes over 7 years ago
