I would like to consider teaching English or contribute to building infrastructure in Swaziland. Are there many organisations operating there?
A simply google search brings up pages and pages of opportunities for Swaziland but one of my friends used http://www.i-to-i.com/swaziland/ to find something in Tanzania.

MAKE SURE YOU RESEARCH WHETHER THE COMPANY IS ETHICAL... IF THEY WORK FOR PROFIT THEY OFTEN EXPLOIT LOCAL COMMUNITIES AND VOLUNTEERS. YOU NEED TO INJECT MONEY TO MAKE A CHANGE, NOT JUST TIME!
