For bullfighting aficionados this is THE festival of the year, a very important date in the calendar. Consequently the venue gets very crowded, so if your children are young keep a tight hold of them. The more expensive the seat in the 25,000 seat venue, the better it is. You'll pay more for shade (sombre), but if you're going to be sitting in the elements for up to 3 hours I suggest you pay for it. The seats are very narrow, with no backrest, so forget about taking a backpack or sizeable bag of any type.
You may want to assess if bullfighting is really suitable for your family. Many non-Spaniards, and I mean adults, find it confronting, especially the smell of the blood and the cries of the dying animal.
if watching the bullfight is NOT for you, you can still enjoy a brilliant festival atmosphere in and around Las Ventas.
