Small island of Koh Lanta off the coast of Krabi, Thailand. My favourite out of many Thai beaches I've been to. The tourism infrastructure is not over-developed, so there are not inconsiderate drunk Australians hanging around like most SE Asian beaches.
But it's developed enough to give you the holiday you want while still being authentically Thai. There are a range of basic bungalows to opulent resorts, plus everything in between.

Have you considered Pemuteran in Bali? It's on the north west coast and absolutely stunning.
Great place for diving, snorkelling and at the base of the National Park (trekking) etc - not touristy. Totally unspoilt.
Another reallylovely place is in Nusa Lembongan (a short boat ride from Sanur, Bali). Again, unspoilt and not many tourists. over 5 years ago
Boracay Beach in Malay Aklan in the Philippines is really a must-see. We were there recently, that's actually just 2 weeks ago :p The beach is really fantastic and there are lots of water sports activity to choose from. The lodgings are also cheap and yet, the service is really fantastic. Our hotel staff never miss to greet us a good morning or a good evening ;) Aside from that, there is a very live night life and a trip to D*mall, a mini shopping centre, is worthwhile.
And oh, in your travel, don't forget comfortable, low-heeled shoes, like our favorite espadrilles. These days,they are really handy , not only for the countryside, but also for sightseeing along cobblestone streets and long beach walks.
