I want guaranteed sun and relaxation within a short flight and near our time zone, but not if it could be problematic with young children - many people I've spoken to think it's inappropriate to go there with such young children. Also has anyone had experience of anti malaria remedies with children and babies.
The Gambia has a well developed tourism industry, so you'll probably find what you're looking for. As to health, especially anti-malarials and children... the Center for Disease Control has a table of antimalarials and which can or cannot be taken by children here:

But its recommended for children weighing more than 10 kgs and less than 40kgs, so may not be suitable for your 6 month old.
Appropriate or not - depends on how experienced you are as a traveller, how adventurous, and what sort of accommodation you intend to stay in. Water borne diseases and malaria are VERY common in The Gambia (it is based entirely around the river Gambia). Have a look at worldnomads.com travel safety advice here:
