Best known and good quality boutique hotels in Amsterdam are The Dylan and Hotel Seven One Seven. Not boutique, but also recommendable are Hotel Pulitzer (fairly small rooms, however), and Sofitel Legend The Grand Amsterdam, which, in my opinion, is the best hotel in Amsterdam. Both are located very well, and have great local flavor because they are housed in historical buildings. The Pulitzer is located in a row of 17th century canal houses, and The Grand in a former, 15th century convent, in the 16th/17th century used as hotel for naval officers, with William of Orange, Holland's "Father of the Fatherland" as it's most famous guest, and as city hall until the present conversion to hotel.
Recommendable boutique hotel for a smaller budget: Boutique Hotel View.

I stayed at the hotel Pulitzer last year. We had a very large room and it is very unique being formed by townhouses joined together. Great location and great historic hotel. almost 7 years ago

Amsterdam has some wonderful boutique hotels like Hotel Fita, Seven on Seven, Amstel Hotel, The Toren.
If you are an art lover, or dig pop culture, you've got some really quirky options too. Lloyd Hotel and The Exchange are your pick then. over 6 years ago
