India recognises the International Driver's permit, so if you're licensed to ride a motorbike at home and get the IDP you'll be riding legally in India.
I strongly advise against riding without a license, because of insurance implications. India's roads are notoriously dangerous, riding a motorbike is notoriously dangerous, add those two together and you get an increased risk you'll be involved in a traffic accident. If you are you'll want the best medical care travel insurance can buy you - but obviously you cannot be insured for doing anything illegal. You may need medical evacuation home, which could cost many tens of thousands of dollars, which without insurance you and your family would be liable to pay.
