We can't say enough good things about the Panorama Guest House in Udaipur. We loved Udaipur so much we stayed an extra day there. It was the longest stop in our three weeks traveling through Rajasthan, Delhi and Agra. We paid 600 rupees for a ground floor room and it was amazing. The best room and value we experienced in India. The restaurant is ok, there are better options with better quality and value, but the rest of the hotel is fantastic.

Stay in one of the haveli-turned-hotels on City Palace Road. Ashiana, Jaiwana Haveli, etc. are quite good, and have rooftop sit-outs and restaurants. Actually all of the hotels on the road have rooftop restros. About sightseeing, Lake Pichola, City Palace (including the light n sound show), Sajjangarh fort (wait for the sunset there; it's like animation and one of the best in the country), see a folk dance performance at Bhairon ki haveli.
I went to Udaipur last year; hadn't planned the trip, so ended up exploring a lot of options. Here's my list of what to do and where to go.
