I already have a few places/ countries and sites in mind but I was wondering about places that people say you just can't miss or places you would only know to go to by experience such as shows, restaurants etc. Any country and site is available for thought, thank you!

Wow - big question, and one I'm not sure has an easy answer as there is so much.

My top few places would be:
    - Venice (just walk and walk and walk)
    - Sienna in Tuscany (hire Vespa and explore)
    - Amalfi Coast (many small towns, especially Capri)
    - Paris (if you've never been before)
    - One or more of the Greek Islands (take your pick: Santorini? Crete? Naxos?)
    - Alhambra in Granada

    Or for something more off-the-beaten-path:
    - Santiago (west coast of Spain in Gallicia)
    - Isle of Skye off the coast of Scotland

You're not going to be able to see the whole of Europe in a month. Even monthly Inter-rail tickets divide Europe into different zones otherwise you'll dilute your trip too much & end up running around like a headless chicken, seeing everything & experiencing nothing. If you narrowed it down to what area/countries.sights of Europe you really want to see we might be able to give you a more focused answer. Do you like cities (like if you visit that major city of a country do you write that country off as done & dusted) or do you prefer mountains/countryside, getting off the beaten track & seeing countries a bit more indepth. Europe won't have fallen off the map by the time hopefully you make a return visit. about 9 years ago
