Hmm One day in Cairo!!! :) Early morning start with Saqqara or Step Pyramid, (the pyramids of Giza is a must see, just needs more time) then go to Tahrir Square for Egyptian Museum and have a great tour between the pharaohs and their dynasties, don't forget the Mummy Room. You might have finished by 5 pm or 6 pm, Go dine downtown Egyptian oriental food at "Felfela's" or "Koshary Tahrir" then you can go to Khan El Khalili at El Hussein at night for some Shopping, its the oldest market ever with so many lovely oriental gifts, and monumental Old islamic mosques and buildings..My personal favorite place! about 9 years ago

Early AM/PM see Pyramids. Then onto Museum - spend most of rest of day there with perhaps a brief walk through of old Coptic area of city.
Evening / night at Khan-el-Khalili is great - the place comes alive at night. THE place for trying out apple flavoured hookahs / shishas
