A resort with vegetarian food, yoga and/or Eco friendly would be perfect.

    Please keep in mind that November is still hurricane season in the Caribbean. You might want to check out Costa Rica. We visited in December of 2011 and had an incredible time. Eco tourism at its best. You can go to several parts if you're interested in surfing, spending time on the beach, traveling to natural sites (volcano, springs) and the cloud forest. http://greentiquehotels.com/costa-rica-mountain-hotel Greentique hotels has a few in Costa Rica. We visited Villa Blanca and had friends that stayed in the one in Manuel Antonio as well. As a vegetarian I was thrilled with their menu. I always had many choices and they have their own farm/vegetable garden on site. They did also have a yoga studio available to book with an instructor available to call. http://www.hotelvillacaletas.com We stayed here in Jaco which also had more of a luxury feel but gave you access to the town which could put you in contact with more locals for a more low-key vibe, but they do have their own private beach. http://www.zamoraestatehotel.com/hotel/en/index.html We did a stop here in San Jose flying in from New York and wanting a day or two to relax. Huge property, with a vineyard and your own private bungalows complete with flower arranging, cooking lessons, dinner with the owners and hundreds of beautiful birds that arrive nightly on the property's pond.
