This is bit of a tough questions to answer because there is such a huge amount of restaurants in Vancouver so it might depend more on which area you are staying in. When I think of typical, I think of local, which would be what they "Pacific Northwest" and when I think Pacific Northwest, I think salmon and seafood and restaurants that use local produce, etc... so here you go...
Formal... Bishop's on 4th Ave (very formal and pricy, but well worth it)
Casual and Hip... Cascade on Main Street (one of my favourite)
Small Trendy... Twisted Fork on Granville Street (small restaurant with great food)
Fast food... Go Fish at Granville Island (excellent fish and chips and local seafood)
There are tons of other great options but for lack of time and to keep this short I'll stop there. Hopefully someone else can add some other ideas. Enjoy!
