Thailand is easy travel and full of wonderfulness -- the food, history, culture, shopping, beauty, wonderful scenery, and friendly people. Bangkok, Chiang Mai/Rai, and beaches (try Ko Yao Noi for a bit quieter) would fit your needs.
I love Laos too -- though it is landlocked. I think the best shopping in SE Asia is in Luang Prabang (for unique and handmade items, though the generic factory made stuff is crowding in). Incredible eating there too (the restaurant at The 3 Nagas Hotel in particular), plus a gentle culture with lots to learn about.
Here is my travel advice for Luang Prabang: http://traveleater.net/2014/05/16/luang-prabang-laos-travel/ about 4 years ago

Start in Chiang Mai for culture, shopping, and great food (stay in the old city). Then fly Air Asia to Krabi or Ko Lanta for beach time. Fly home from Phuket. Stay at Nai Yang Beach before your flight; quiet and close to the airport. If you are there on a Tuesday, Thursday or Saturday there is a good night market. about 4 years ago
