Originally fancied Israel but heard it was very expensive...

How about Portugal?

Have a look at the European southern Mediterranean, places like Kos in Greece, southern Spain, Cyprus, Malta, Sicily. Portugal too. They should be warm enough (about 21°C max) to sunbathe/swim in the sea and with much fewer crowds than the busy summer months. I second southern Spain- truly the perfect time to go: not deathly hot or swarming with hoards of tourists. It is a deeply magical and romantic place full of anything you fancy- food or hiking or beaches or hilltop towns- plus several festivals!

I third southern Spain- the Pueblos Blancos region is fantastic but beware you're in the mountains and it can get chilly at night.
We've also had super weather in Morocco in April. But we've had bad luck in central and eastern Europe during April.
