Go to U Provaznice. Order yourself some smazny syr (fried cheese) and pork knee with beer sauce. Wash it down with a few Gambrinus and a shot of Becherovka. You won't get more local than that! I have some friends staying at the "Impressive Hotel" on Au Trieu in the Old Town. It's on a really nice little quiet street with plenty of cool cafes and restaurants around. You're also just behind Josephs Cathedral. It's about $30 a night for 2 people. If you do get there check out the little store called "Indigenous", about 50 metres up the road from the hotel. They sell lots of really neat handicrafts which are all made by disadvantaged youth... they also sell the best coffee in Hanoi which has been sourced from a co-op of about 20 small coffee growers around Vietnam. almost 8 years ago
I'd recommend local operator Freddie and Robin at Real Life Adventure Travel... they do safaris, adventure and cultural trips depending on your interest. I've always found them to be highly knowledgable and professional. almost 8 years ago
