What are your best ideas for a 1 week cycling tour of Northern belgium?

What type of cycling are you looking for? I would advise the flemish ardennes, if you're up to it. The days that every brewery opens his doors to give bypassers a taste, seems to be over. You can make reservations for a guided visit, for groups. No worries!
